Nodoguro, a luxury fish, is one of Shimane's specialties.
We serve this nodoguro,
We offer simmered dishes made with Izumo Benibai Soy Sauce, which has been in business for about 190 years!
In other words, it is a gem filled with the flavors of Shimane.
The fatty and flavorful nodoguro tuna and the sweet and spicy broth are a perfect match,
It is a delicious dish that will keep you coming back for more!
Of course, we also offer a simple dish called "grilled bluefin tuna with salt.
Another specialty is shijimi clams, which should not be forgotten.
The shijimi clam caught in Lake Shinji is used to make a delicious dashi broth, which is then served as "shijimi dashi maki" (shijimi clam dashi roll).
The gentle taste of the egg and the profound shijimi clam broth are a perfect match, making this dish a comforting and healing experience.
